  • 4 ounces fresh goat cheese, softened
  • 2 oz cream cheese, softened
  • 1 teaspoon fresh rosemary, finely chopped
  • 45 fresh basil leaves, finely chopped
  • zest of 1/2 lemon
  • 1/4 teaspoon kosher salt, plus more for tomatoes
  • red pepper flakes to taste
  • 2 cups cherry tomatoes, halved
  • 1 teaspoon olive oil, plus more for baguette
  • 1/2 t kosher salt for tomatoes
  • 1 clove garlic, minced
  • freshly ground black pepper to taste
  • drizzle of balsamic glaze (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). While the oven preheats, slice your french baguette into thin rounds (about 1/2 inch thick). Lightly brush each slice with olive oil and arrange them on a baking sheet. Toast in the preheated oven for 8-10 minutes, or until golden and crisp. Set aside to cool.
  2. In a medium bowl, combine the softened goat cheese and cream cheese. Add the finely chopped fresh rosemary, basil, lemon zest, 1/4 teaspoon kosher salt, and red pepper flakes to taste. Mash all ingredients together with a fork until they are well-blended and creamy. Cover the bowl and chill in the refrigerator for at least 1 hour to allow the flavors to meld and the mixture to firm slightly.
  3. Prepare the roasted cherry tomatoes. Halve the cherry tomatoes and place them in a separate bowl. Drizzle with 1 teaspoon of olive oil, 1/2 teaspoon kosher salt, freshly ground black pepper, and the minced garlic. Toss gently to coat.
